For the AT host: images_full/nrf9160dk_at_client_2019-11-29_d3130d77.hex
For the asset_tracker example: images_full/nrf9160dk_asset_tracker_2019-11-29_d3130d77.hex for LTE-m or nrf9160dk_asset_tracker_nbiot_2019-11-29_d3130d77.hex for NB-IoT
These files are in the nRF9160 SiP application and modem firmware package.

"Follow these steps to update the nRF9160 DK with the appropriate hex file (see CONTENTS.txt in the download for description)" there are mulitple files, how do i know which HEX files to load, should i load all ?

Yes, 1NCE is a Telekom reseller, and their network now officially supports the nR9160 with both NB-IoT and LTE-m: https://www.nordicsemi.com/News/2020/02/Deutsche-Telekom-and-nRF9160-have-achieved-certification-for-LTE-M-and-NB-IoT
