What value do I need to set in nrf52840_bitfields.h for I2C frequency to get <= 50 k ??

Hi,
You can try 0x00C80000, which should give ~48.9 kHz. Note that other values than the ones listed in the register has not been tested or verified, and may not work correctly. The minimum supported bitrate in the TWI(M) peripheral is 100 kbps, so below this you are operating outside of spec.

What have you tested to detect the peripherals?
Have you used the TWI scanner example to get the correct address of the connected peripherals?
Are the peripherals powered correctly?
Have you verified that the peripherals work correctly with other I2C master?
Have you looked at the signals on the TWI bus with a logic analyzer, to see if the slave responds to the commands?
